Hippie, earth-conscious people EVERYWHERE! It was awesome!&lt;br /&gt;&lt;br /&gt;&lt;strong&gt;Breakfast&lt;/strong&gt;- we drank a green smoothie in the car on the way there and I cut up some fruit to eat once we got there (it was only a 40 minute drive)&lt;br /&gt;&lt;br /&gt;&lt;strong&gt;Snack&lt;/strong&gt;- We went to Wild Oats so I could get a few things for my Memphis trip this weekend and I got a vegan poppy seed cookie to eat as we shopped&lt;br /&gt;&lt;br /&gt;&lt;strong&gt;Lunch&lt;/strong&gt;- EUPHORIA LOVES RAWVOLUTION!! Yes, we finally went to rawvolution- the vegan, raw restaurant in Santa Monica. I was so giddy and ordered the italiano pizza, creamy taco salad, marinated greens salad and had some of Ryan mushroom burger. We drank goji berry lemonade which was wonderful and a green juice that I HATED, it had cucumbers in it and was SO gross, LOL! Dessert was a chocolate cookie dough ball and an apple raisin cookie.&lt;br /&gt;&lt;br /&gt;&lt;strong&gt;Dinner&lt;/strong&gt;-no dinner, out lunch was HUGE&lt;br /&gt;&lt;br /&gt;&lt;strong&gt;Dessert-&lt;/strong&gt; air popped popcorn with some olive oil spray and salt. About 1 hour I got hungry (probably because i skipped dinner) and had some cinnamon raisin ezekiel toast with my new raw walnut butter that I got at Rawvolution. It was a busy day so I didn't eat much more.&lt;br /&gt;&lt;br /&gt;&lt;strong&gt;Dinner&lt;/strong&gt;- I made a mushroom and carmelized onion burger. I don't really care for thai food and I don't like tofu (wierd right, a vegan who doesn't like thai or tofu, LOL). But i had mushrooms, onions, pineapple, tomatoes and tofu in a sweet and sour sauce with brown rice. So my meals were quick and easy!&lt;br /&gt;&lt;strong&gt;&lt;br /&gt;Breakfast&lt;/strong&gt;- bowl of oatmeal with a cinnamon mixed in, topped with strawberries and a sliced banana, and santa cruz organic juice on the car ride&lt;br /&gt;&lt;br /&gt;&lt;strong&gt;Lunch&lt;/strong&gt;- a huge salad from my schools salad bar- spinach, brocolli, kidney beans, sunflower seeds, tomatoes, olive oil, balsamic vinegar, and pepper.&lt;br /&gt;&lt;br /&gt;&lt;strong&gt;Snack&lt;/strong&gt;- A PURE bar, saw them at whole foods and thought it looked pretty good, I only bought 1 and am totally regretting it...and as much as I hate to be a trader to Larabars, these are better!! My foot is killing me from the hike and there was NO way I was putting on closed toe shoes! But I have started eating healthier, exercising more frequently and basically setting out a plan for the week. So I'm going to post what I eat each day along with recipes, as well as my workout for the day! Hopefully I can motivate you to join me! SO dumb on my part- not only can I not make anything that uses ice until I get another tamper but I'm sure I dulled the blades on my blender as well. But it made me realize how bad it would be if someones finger got in there. If it can shred a huge stick of plastic I don't even want to imagine what else it can do to body parts!! :( This smoothie was seriously awesome though! These are really good scones, even without the glaze if youre feeling too guilty to add it!&lt;br /&gt;&lt;br /&gt;&lt;strong&gt;Chocolate Glazed Peanut Butter Scones&lt;/strong&gt;&lt;br /&gt;&lt;br /&gt;PB Scones&lt;br /&gt;1 1/2 c AP flour&lt;br /&gt;2 TBSP sugar&lt;br /&gt;2 tsp baking powder&lt;br /&gt;1/4 tsp salt&lt;br /&gt;2 TBSP margarine&lt;br /&gt;1/4 c crunchy peanut butter&lt;br /&gt;1 tsp vanilla extract&lt;br /&gt;1/2 c soymilk&lt;br /&gt;&lt;br /&gt;Choc PB Glaze&lt;br /&gt;1/3 c confectioners sugar&lt;br /&gt;1/2 TBSP cocoa powder&lt;br /&gt;1 TBSP creamy PB&lt;br /&gt;1 TBSP plain soy milk&lt;br /&gt;&lt;br /&gt;Preheat oven to 400. Combine flour through salt, and use a fork to press the margarine and peanut butter into the mixture. When it begins to resemble large crumbs add the vanilla and slowly drizzle in the soymilk. while stirring. Drop the dough into a circle and cut into 4 quarters. The applesauce makes them extremely moist. These are way better than any pancakes you could get a breakfast diner.&lt;br /&gt;&lt;br /&gt;&lt;strong&gt;Apple Cinnamon Swirl Pancakes&lt;/strong&gt;&lt;br /&gt;&lt;br /&gt;Pancake Batter:&lt;br /&gt;&lt;br /&gt;1 1/4 cups unbleached flour &lt;br /&gt;2 tablespoons sugar &lt;br /&gt;2 teaspoons baking powder &lt;br /&gt;3/4 teaspoon salt &lt;br /&gt;1/8 teaspoon cinnamon &lt;br /&gt;1 1/3 cups almond milk or soymilk &lt;br /&gt;1/2 tablespoon egg replacer powder* mixed with 2 tablespoons water &lt;br /&gt;1/4 cup chopped walnuts&lt;br /&gt;&lt;br /&gt;Cinnamon-Apple Swirl Batter:&lt;br /&gt;&lt;br /&gt;2 tablespoons prepared batter (above)&lt;br /&gt;2 tablespoons natural apple sauce&lt;br /&gt;1 teaspoon cinnamon&lt;br /&gt;In a large bowl, mix flour, sugar, baking powder, salt, and cinnamon. Add almond (or soy) milk and egg replacer mixture and stir just until flour is moistened. (For thicker pancakes, use only 1 cup milk.) Let the batter rest for 5 minutes while the skillet heats.&lt;br /&gt;&lt;br /&gt;While the batter is resting, combine all of the "swirl" ingredients, using 2 tablespoons of the prepared batter.&lt;br /&gt;&lt;br /&gt;Heat a non-stick griddle or skillet (sprayed lightly with non-stick spray) over medium heat until a drop of water sizzles. Gently stir the walnuts into the batter. Pour batter by scant 1/4 cupfuls onto hot griddle. Immediately drizzle the cinnamon-apple batter over the top of each pancake in a swirl pattern. Cook until tops are bubbly and bubbles burst; edges will look dry. With a pancake turner, turn and cook until undersides are golden. Place on a warm platter; keep warm. &lt;br /&gt;&lt;br /&gt;Repeat until all batter is used, brushing griddle lightly with canola oil, if necessary, to prevent sticking. Gently stir in soymilk, oil, and vanilla but be careful not to over-mix. A few lumps are okay! Fold in your thawed strawberries and pour batter into muffin tins, 3/4 of the way to the top. Slide you filled tins into the oven and cook for 15 – 20 minutes, depending on your oven. Truly hits the spot and feels you up QUICK! No joke! I was missing a few ingredients so improved and added others in its place. Its pretty simple so you can change it however and can't really go wrong!&lt;br /&gt;&lt;br /&gt;Leek and Bean Cassoulet with Biscuits&lt;br /&gt;&lt;br /&gt;&lt;strong&gt;Ingredients&lt;/strong&gt;&lt;br /&gt;&lt;br /&gt;stew&lt;br /&gt;2 yukon gold potatoes, cut 1/2 inch dice&lt;br /&gt;3T cornstarch&lt;br /&gt;2T olive oil&lt;br /&gt;2 leeks, washed well and sliced thinly (about 2 cups)&lt;br /&gt;1 small onion, cut into medium-sized dice&lt;br /&gt;1 1⁄2c carrots, peeled and cut into 1/2 inch dice&lt;br /&gt;2 cloves garlic, minced&lt;br /&gt;1T heaping, chopped fresh thyme, plus extra for garnish&lt;br /&gt;several pinches of freshly ground black pepper&lt;br /&gt;1⁄2t salt (more or less depending on how salty your broth is, so taste first&lt;br /&gt;3⁄4c frozen peas&lt;br /&gt;1 (15 ounce) can navy beans, drained and rinsed (about 1/2) cups&lt;br /&gt;&lt;br /&gt;biscuits&lt;br /&gt;3⁄4c plain soy milk&lt;br /&gt;1t apple cider vinegar&lt;br /&gt;1 1⁄2c all-purpose flour&lt;br /&gt;2t baking powder&lt;br /&gt;1⁄4t salt&lt;br /&gt;1⁄4c nonhydrogenated vegan shortening&lt;br /&gt;&lt;br /&gt;&lt;strong&gt;Instructions&lt;/strong&gt;&lt;br /&gt;Preheat the oven to 425 degrees.&lt;br /&gt;Place the potatoes in a small pot and cover with water. Cover and bring to a boil. Once boiling, let cook for about 10 minutes, until the potatoes are just tender enough to be pierced with a fork. Drain immediately so that they do not overcook. While they are boiling, you can prep the rest of the veggies and start preparing the biscuits - the potatoes should definitely be done by the time you are.&lt;br /&gt;Now, prepare everything for the biscuits. You're not going to make them yet, but it's good to have everything ready when it comes time to top the stew. Add the vinegar to the soy milk in a measuring cup and set aside to curdle. Mix the flour, baking powder, and salt in a medium-size mixing bowl.&lt;br /&gt;&lt;br /&gt;Now leave that alone and start the stew:&lt;br /&gt;Mix the cornstarch into the vegetable stock until dissolved.&lt;br /&gt;Preheat an oven-safe skillet, preferably cast iron, over medium heat. Saute in the oil the leeks, onions, and carrots until ery soft and just beginning to browm about 10 minutes. Keep the heat moderate so that they don't burn.&lt;br /&gt;Add the garlic, thyme, freshly ground black pepper, and salt, and cook for 1 more minute. add the cooked potatoes, and frozen peas, then pour in the vegetable stock mixture. Raise theh eat just a bit; it will take a few minutes but the liquid will start simmering. Once it does, lower the heat again. Let it simmer for about 7 minutes, stirring occasionally, but no longer than that. If you need more time for the biscuits, then turn off the heat under the stew.&lt;br /&gt;&lt;br /&gt;Back to the biscuits&lt;br /&gt;Add the shortening to the flour in small slivers and work it into the dough with a fork or with your fingers until large crumbs form. You don't want to cream it in; there should be clumps. Drizzle in the soy milk and mix with a fork until everything is moistened (some dry parts are okay).&lt;br /&gt;Wash and dry your hands, then lightly flour them and get them dirty again. Gently knead the dough about ten times right in the bowl, just so that it is holding together and not very sticky. If it seems sticky, as in sticking to your fingers, then gently work in a little more flour. Set that aside and check your stew.&lt;br /&gt;The stew should be simmering and slightly thickened. Mix in the beans. Now, let's add the biscuits. Pull off the chunks of dough that are about slightly large than golf balls. Gently roll them into balls and flattem at bit; they do not ahve to be prefectly round. Add them to the otp of the stew, placed an inch or so apart.&lt;br /&gt;Transfer the whole megillah to the preheated oven. If you are worried about spillover, place it on a rimmed baking sheet, but we've never had that problem. Bake for about 15 minutes. The biscuits should be just slightly brown and firm to the touch.&lt;br /&gt;Remove from the oven and use a large serving spoon to place some of the stew and a biscuit in each shallow, individual bowl. Sprinkle with a little chopped, fresh thyme.&lt;br /&gt;Serve at last! Ryan said it was his fave tofu so far!&lt;br /&gt;&lt;br /&gt;&lt;strong&gt;Ingredients&lt;/strong&gt;&lt;br /&gt;2 tsp arrowroot powder&lt;br /&gt;1/2 fresh squeezed OJ&lt;br /&gt;1 tsp orange zest&lt;br /&gt;3 Tbsp tamari&lt;br /&gt;2 Tbsp maple syrup&lt;br /&gt;2 Tbsp apple cider vinegar&lt;br /&gt;2 cloves minced garlic&lt;br /&gt;1 Tbsp toasted sesame oil&lt;br /&gt;1 pkg extra firm tofu sliced in 1/4 inch thick squares&lt;br /&gt;1 tbsp sesame seeds for garnish&lt;br /&gt;&lt;br /&gt;Preheat oven to 400 degrees. In an 8x12 baking dish combine arrowroot with 2 Tbsp OJ and stir. Add remaining juice and ingredients except tofu and stir. Add tofu and turn to coat. Cover and refridgerate to marinade for an hour or longer. To bake, cover with foil and bake for 15 minutes. Take out, remove foil stir and bake another 9 minutes without foil.&lt;br /&gt;&lt;br /&gt;At this point the recipe ends, but I decided to throw the tofu chunks on the stove and fry them up for a few minutes on each side so they aren't so bouncy, LOL! Super easy to make and odds are you'll have all the ingredients on hand.&lt;br /&gt;&lt;br /&gt;&lt;strong&gt;Ingredients&lt;/strong&gt;&lt;br /&gt;2 flour tortillas&lt;br /&gt;1 can of kidney beans heated on stove mixed with seasonings of your choice (chili powder, cumin etc.)&lt;br /&gt;lettuce or a salad mix (I use herb salad mix)&lt;br /&gt;guacamole (I made my own with 1 avocado, salt, lime juice, 1/2 and onion and 1 tomato)&lt;br /&gt;salsa&lt;br /&gt;soy cheese&lt;br /&gt;&lt;br /&gt;Get 2 pieces of foil and roll them into 2 seperate balls. Place on a baking sheet, and lay your tortilla on top of the foil balls. Bake in oven at 400 degrees for about 5 minutes. They are a great local store that even has a tracker that tells you how much solar energy they are putting out each day. SUPER COOl!! I forgot to take a picture of our sandwiches but the dessert was a must, all vegan! We got a vegan mexican wedding cake (I ate it before I got a picture, LOL), vegan lemon bar, and a vegan peanut butter and chocolate smore bar. Everything was delish!! What goes better with cornbread besides soup (chili of course but we had that last night, LOL) As I was making this I was laughing about how this is probably the only southern meal I have ever cooked! I threw some cut up red potatoes, zucchini, carrots, brocolli, celery garlic, and onions and about 4 cups of veggie broth and a can of diced tomates. I then added a can of kidney beans, some basil, oregano, salt and pepper and boiled it and let simmer for about 25 minutes. I got the recipe out of my vita-mix recipe book (mistake #1) and threw it together. I didn't get a chance to try it and just left it out for him to eat when he got home from work. I figured it would be fine right...wrong, it was disgusting. He said it was terrible and I didn't beleive him so when I got home I tried it and wanted to throw up. The whole way back for some odd reason I was craving potato fries. Cook at 400 degrees for 10 minutes on each side. You can't deprive yourself entirely. So I woke up and the first thing on my mind was french toast. I had never made vegan french toast besides a fruit stuffed one and I followed a recipe for that one before so I browsed the internet trying to find a good recipe and I came across this one on vegweb.com...the original recipe is here- http://vegweb.com/index.php?topic=13005.0 and I put it below with a few of the changes I made :) They were absolutely delicious...even Ryan said they were better than the non vegan french toast he was used to!!&lt;br /&gt;&lt;br /&gt;&lt;strong&gt;Ingredients&lt;/strong&gt;&lt;br /&gt; 1/2 cup rice milk&lt;br /&gt; 1/2 teaspoon vanilla extract&lt;br /&gt; 2 tablespoons sunflower oil&lt;br /&gt; 1/4 teaspoon salt&lt;br /&gt; 1 tablespoon flour&lt;br /&gt; 2 tablespoons cornstarch&lt;br /&gt; 3 teaspoons sugar&lt;br /&gt; 1 teaspoon cinnamon&lt;br /&gt; 4 slices whole wheat bread from Trader Joes&lt;br /&gt; Maple Syrup&lt;br /&gt; Powdered sugar&lt;br /&gt;&lt;br /&gt;Cut slices of bread into 4 equal sticks. Mix first 9 ingredients in bowl and dip the sticks individually into mixture. Lay sticks on a pan greased with a little earth balance. Cook on low heat for 4 minutes and then medium-high heat for another minute. Flip over and cook the opposite side for about 2 minutes on medium-high heat. After about 10 minutes drain the water and throw the brocolli and taters in the vitamix. Mix in a bowl the sweetener through vanilla and add the melted chocolate. Mix and add the rest of the ingredients. Spread evenly on a parchment lined baking sheet and bake 12-15 minutes. Its really easy to make and I think I have posted about it before. You basically throw brocolli, red peppers, green peppers, onion (the chunkier the better) garlic and tofu in a wok with a little bit of extra virgin olive oil and when its just about done throw some teriyaki sauce on it and toss it on top of some brown rice. Nothing special just a basic one from amazon.com and I am really struggling as what and how to make food. There aren't many recipes online and the dehydrator booklet it came with wasn't much help so my roommate Shandon and I basically threw everything in our kitchen in and dried it. That was quite an experience I must say...especially the dried carrots and snap peas, LOL! The apples were good though! I have no idea what I did wrong and while they were edible I made WAY too many and ended up throwing about 15 away. It was very sad to do but we all kickstarted a healty eating/workout plan last Monday and just couldn't have them sitting on the counter staring at us anymore. We have amazing farmers markets in both Ventura and Oxnard that offer a HUGE selection of organic fruits and veggies, preserves, hummus and amazing homemade bread that is made locally in Ojai. They are from the vegan cupcakes take over the world cookbook and they are the best cupcakes I have ever had, vegan or not.&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;&lt;strong&gt;Golden Vanilla Cupcakes&lt;/strong&gt;&lt;br /&gt;&lt;br /&gt;1 cup soymilk&lt;br /&gt;1 tsp apple cider vinegar&lt;br /&gt;1 1/4 cups flour&lt;br /&gt;2 tbsp cornstarch&lt;br /&gt;3/4 tsp baking powder&lt;br /&gt;1/2 tsp baking soda&lt;br /&gt;1/2 tsp salt&lt;br /&gt;1/3 cup canola oil&lt;br /&gt;3/4 cup granulated sugar&lt;br /&gt;2 tsp vanilla extract&lt;br /&gt;1/4 tsp almond extract&lt;br /&gt;&lt;br /&gt;Preheat over to 350. Whisk soymilk and vinegar and set aside. Beat together the soymilk mixture, oil, sugar, vanilla, and almond. Sift in the flour, cornstarch, baking powder, baking soda, and salt and mix. Fill cupcake liners 2/3 of the way and bake for 20 minutes.&lt;br /&gt;&lt;br /&gt;&lt;strong&gt;Chocolate Ganache Frosting&lt;/strong&gt;&lt;br /&gt;&lt;br /&gt;1/4 cup soymilk&lt;br /&gt;4 ounces chocolate&lt;br /&gt;2 tbsp pure maple syrup&lt;br /&gt;&lt;br /&gt;Bring the soymilk to a boil in a saucepan, immediately remove from heat and add chocolate and maple syrup and stir until smooth. I think their food is disgusting, but this reminds me of their cinnamon breadstick twists, but in a good way! &lt;br /&gt;&lt;br /&gt;&lt;strong&gt;Cinnamon Sweet Tortilla Strips&lt;/strong&gt;&lt;br /&gt;&lt;br /&gt;2 whole wheat tortillas cut in strips&lt;br /&gt;1 tbsp canola oil&lt;br /&gt;3 tbsp sugar&lt;br /&gt;1 1/2 tsp cinnamon&lt;br /&gt;pinch of sea salt&lt;br /&gt;&lt;br /&gt;Preheat oven to 375. Brush both sides of tortilla with canola oil and dip in sugar, cinnamon and salt mixed in a bowl. Lay on a parchment lined baking sheet and sprinkle whatever is left over on top of the strips. I have yet to get a raw cookbook, I am still adjusting to veganism but I found a recipe for a delicious raw nut dip in my new eat, drink and be vegan cookbook and it was by far the best dip I have ever had!&lt;br /&gt;&lt;br /&gt;&lt;strong&gt;Rawesome Nut Dip&lt;/strong&gt;&lt;br /&gt;&lt;br /&gt;1/2 cup raw almonds&lt;br /&gt;1/2 cup raw pistachios&lt;br /&gt;1/4 cup raw walnuts&lt;br /&gt;1/4 cup raw pine nuts&lt;br /&gt;1/2 red bell pepper chopped&lt;br /&gt;3 tbsp lemon juice&lt;br /&gt;1 garlic clove&lt;br /&gt;1/2 tsp sea salt&lt;br /&gt;1/2 tsp black pepper&lt;br /&gt;5 tbsp water&lt;br /&gt;1/2 cup fresh basil&lt;br /&gt;1 tsp fresh thyme&lt;br /&gt;&lt;br /&gt;In a food processor combine all ingredients from almonds to water. Highly recommended for both weekends or weekdays!&lt;br /&gt;&lt;br /&gt;&lt;strong&gt;Fruit Stuffed French Toast&lt;/strong&gt;&lt;br /&gt;&lt;br /&gt;4 slices whole grain bread&lt;br /&gt;1/2 cup soymilk&lt;br /&gt;1/2 Tbsp flour&lt;br /&gt;1 tsp sugar&lt;br /&gt;1 Tbsp nurtritional yeast flakes&lt;br /&gt;1/4 tsp salt&lt;br /&gt;1/4 tsp vanilla extract&lt;br /&gt;4 large strwaberries&lt;br /&gt;1 banana&lt;br /&gt;2 Tbsp Maple syrup&lt;br /&gt;&lt;br /&gt;Whisk together all ingredients from soymilk to vanilla extract. Dip slices of bread into the mixture and fry on skillet till golden brown (about 1 1/2 minutes per side). After about a minute slowly add in the rest of your veggies cooking each for about 2 minutes before you add in the next. In the last 3 minutes of cooking add a dash of pepper, some basil, and your teriyaki sauce. While the taters are cooking saute the onion and garlic, add 1/3 of the diced tomatoes and put the rest in a blender and add to the saucepan once pureed. Add the remaining ingredients and simmer on low till the taters are done. When the taters are done, take them out of the oven, spread them with the sauce and put on your toppings. Set aside. Preheat oven to 375 and lightly grease a twelve muffin tin. Mix all dry ingredients from flour to salt and make a well in the center and add the apple cider, oil, and vanilla. Mix. Lastly add in the grated and chopped apple. Fill each muffin cup 2/3 full and add topping. Soak the raisins in a bowl of hot water while you mix all the ingredients. Lastly remove the raisins from the water and add them in. Fill the tins and bake 18 to 22 minutes. My boyfriend says this is the best thing I have ever made, and he is one picky eater, if that tells you anything. This is the go-to dinner for whenever I am cooking for meat eaters. The lasagne is a guaranteed hit and I have yet to get a complaint from meat eaters about not being filling enough etc. etc. I made salad and garlic cheesy pita toast with it but forgot to take a picture of the pita toast so that recipe will come later. The dessert was an experiment and came out absolutely delicious as well. I was given a HUGE bag of delicious apples from a local grower and had to find somehow to use some up so I came up with apple crumble.&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;&lt;a href="http://3.bp.blogspot.com/_llG3qTCn2VY/RxhVMk7WQ3I/AAAAAAAAAA8/7K8uy9exHjc/s1600-h/0710170213.JPG"&gt;&lt;img style="display:block; margin:0px auto 10px; text-align:center;cursor:pointer; cursor:hand;" src="http://3.bp.blogspot.com/_llG3qTCn2VY/RxhVMk7WQ3I/AAAAAAAAAA8/7K8uy9exHjc/s320/0710170213.JPG" border="0" alt=""id="BLOGGER_PHOTO_ID_5122938250693329778" /&gt;&lt;/a&gt;&lt;br /&gt;&lt;br /&gt;&lt;strong&gt;Vegetarian Lasagne&lt;/strong&gt;&lt;br /&gt;1 pound dry lasagne noodles&lt;br /&gt;3 cups italian tomato sauce&lt;br /&gt;1 large zucchini, grated&lt;br /&gt;2 large bunches of spinach washed and stemmed&lt;br /&gt;1 pound ricotta cheese&lt;br /&gt;1 pound mozzarella chesse, grated or thinly sliced&lt;br /&gt;1/2 pound provolove, grated or thinly sliced&lt;br /&gt;&lt;br /&gt;Bring the tomato sauce to a boil, stir in zucchini, cook for 5 minutes. Ladle a bit of sauce into the glass 9x13 baking dish so it if coated. Place noodles in a single layer, spread 1/3 of the ricotta cheese, 1/3 of the spinach, 1/3 of the cheese, cover with tomato sauce and repeat 2 more times starting with noodles. Mix with 1 cup brown sugar and line bottom of 9x13 baking dish. In a bowl add oats, flour, remaining cup of brown sugar, baking powder and cinnamon. Gradually add margarine and crumble with fingers until a crumbly texture is achieved. Place oat topping over apples and press down. It wasn't nearly what I anticipated it to be, but it was still good! I made Sweet Potato, Squash, &amp; Apple Soup, toast with pumpkin butter from Trader Joes and peanut butter cookies. I highly recommend the soup..it is amazing! Everyone loved it! But definitely don't make it the main course, it is much too sweet! As you can see in the pictures below my cookies didn't come out like they should have because I halved the recipe and guessed on the measurements alot, but they were still delish, and if you use the complete recipe they will be much better than mine!&lt;br /&gt;&lt;br /&gt;The soup recipe came from How It All Vegan...but I must warn you to leave plenty of time to cut up the ingredients. It took me forever!!&lt;br /&gt;&lt;br /&gt;&lt;a href="http://4.bp.blogspot.com/_llG3qTCn2VY/RxAwp07WQ1I/AAAAAAAAAAs/Z9NU6Fikb8Y/s1600-h/0710100191.JPG"&gt;&lt;img style="display:block; margin:0px auto 10px; text-align:center;cursor:pointer; cursor:hand;" src="http://4.bp.blogspot.com/_llG3qTCn2VY/RxAwp07WQ1I/AAAAAAAAAAs/Z9NU6Fikb8Y/s320/0710100191.JPG" border="0" alt=""id="BLOGGER_PHOTO_ID_5120646271460590418" /&gt;&lt;/a&gt;&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;&lt;strong&gt;Sweet Potato, Squash, &amp; Apple Soup &lt;/strong&gt;&lt;br /&gt;1 medium onion&lt;br /&gt;1 T olive oil&lt;br /&gt;2 cups veggie stock&lt;br /&gt;2 cups butternut squash, peeled and diced&lt;br /&gt;2 cups sweet potatoes or yams, peeled and diced&lt;br /&gt;2-3 medium apples, cored and diced&lt;br /&gt;1/2 tsp salt&lt;br /&gt;1/2 tsp pepper&lt;br /&gt;1/2 tsp nutmeg&lt;br /&gt;1/4 tsp cayenne pepper (optional)&lt;br /&gt;&lt;br /&gt;In a large soup pot, saute the onions in oil on medium high heat until translucent. Add the stock, squash, potatoes, apples, and salt, pepper, nutmeg, and cayenne and bring it to a boil. Turn down the heat and simmer for 30 minutes. Take 2 ladles' worth of veggies and 1 ladle of stock and blend in the blender or food processor until smooth. Return to soup pot and stir together before serving. Lightly grease 2 cookie sheets. Cream together the oil, sugar, peanut butter and vanilla. Add the cornstarch and beat until well combined. Add the flour, baking powder and salt and mix. Drop the dough on sheet and put the little fork slashed in them. Obviously, this is good news to me, LOL! If this in't enough information to make someone start questioning the health effects of eating meat then I don't know what is. Obviously, the companies have done ALOT of research to come to the conclusion that people who don't eat meat will have less health problems because they are willing to take a huge cut to offer them a lower rate. Without fail, every single day you can see me roaming our school cafeteria with a sad look on my face because while even though we are a green, healthy school my only food options consist of a $5.00 fruit cup, a salad with ranch, blue cheese or some other fattening dressing, or a grilled veggie sandwich (that I ordered once and they pulled the grilled veggies out of a plastic tupperware covered in some stinky liquid and she said they pre-grill them and then store them in a plastic container until they are used...GROSS!! Talk about losing nutrients!) These machines would also be amazing in high schools to encourage healthy eating.
