Wing It Salsa



I was feeling a little crazy yesterday and decided to make some salsa. Considering I had no idea what I was doing it came out REALLY good! Ryan was very surprised, he didn't think he was going to like it after he saw me just throw random things into the vitamix.

Ingredients
1/2 a red pepper
1/2 a green peeper
3 tomatoes
a handful of cilanto
1/4 jalapeno pepper
a splash of lemon juice
1/2 an onion
a dash of sea salt

Our Famous Pita Pizza Lunch

The pita pizza is something that I make for lunch whenever I a.dont have time to cook something or b.am just not in the mood to cook anything or make a mess in the kitchen. I have two variations of the pizza below...the hummus-pesto pizza being mine and Ryan's fave the veggie cheese pizza.

Hummus-Pesto Pizza

Ingredients
Pita bread
Hummus- any flavor you like (classic and tomato basil are my faves for this)
Pesto
Tomatoes
Mushrooms

Top pita bread with all your ingredients and cook in the oven at 400 degrees for 10 minutes.

Soy Cheese Veggie Pizza

Ingredients
Pita Bread
Pizza sauce (I get mine from Trader Joes)
Soy Mozzarela Cheese
Red Pepper
Green Pepper
Tomatoes
Mushrooms
Onions

Top pita bread with all your ingredients and cook in the oven at 400 degrees for 10 minutes.

Potato Fries




Shandon and I went on a beautiful hike up a hill that is right behind our house that overlooks all of Ventura and the ocean. The whole way back for some odd reason I was craving potato fries. These are super simple and delicious.



Ingredients
Red Potatoes (I usually cut up 2-3 when its just for me)
Extra Virgin Olive Oil
Sea Salt

Cut the poatoes up into wedges, put on a baking sheet, pour some olive oil on the wedges and mix it around with your hands till the poataoes are a lil coated and sprinkle salt on them. Cook at 400 degrees for 10 minutes on each side. Serve with some organic ketchup!

Sunday Fun Day French Toast Sticks



I am eating extremely healthy and going to the gym 6 days a week so I have decided to let myself have Sunday as the day I can eat something sweet, eat out or what not. You can't deprive yourself entirely. So I woke up and the first thing on my mind was french toast. I had never made vegan french toast besides a fruit stuffed one and I followed a recipe for that one before so I browsed the internet trying to find a good recipe and I came across this one on vegweb.com...the original recipe is here- http://vegweb.com/index.php?topic=13005.0 and I put it below with a few of the changes I made :) They were absolutely delicious...even Ryan said they were better than the non vegan french toast he was used to!!

Ingredients
1/2 cup rice milk
1/2 teaspoon vanilla extract
2 tablespoons sunflower oil
1/4 teaspoon salt
1 tablespoon flour
2 tablespoons cornstarch
3 teaspoons sugar
1 teaspoon cinnamon
4 slices whole wheat bread from Trader Joes
Maple Syrup
Powdered sugar

Cut slices of bread into 4 equal sticks. Mix first 9 ingredients in bowl and dip the sticks individually into mixture. Lay sticks on a pan greased with a little earth balance. Cook on low heat for 4 minutes and then medium-high heat for another minute. Flip over and cook the opposite side for about 2 minutes on medium-high heat. Serve sprinkled with powdered sugar and maple syrup!!

White Wine Sangria

My roommate Shandon and I made this a while ago but we finished it all by ourselves and loved every sip of it

White Wine Sangria

Ingredients
Stir 1 bottle sauvignon blanc with 2 TBSP agave nectar and a cut up apple, orange, pear, plum, pineapple and watermelon.

Super Rich Brocolli Soup and Mashed Taters




I made this delicious brocolli soup in the vitamix and had cut up too many potatoes so I decided I misewell make some mashed taters to go along with the soup but we ended up loving it as a gravy on the soup along with some soy bacon bits that our local health food store just started carrying! If I make it again as a gravy I will definitely cut back on the taters in the soup recipe.

Brocolli Soup

Ingredients
Medium head of brocolli
3 potatoes diced
1 veggie broth cube
salt and pepper

Boil the brocolli and potatoes with the veggie cube in about 5 cups of water. After about 10 minutes drain the water and throw the brocolli and taters in the vitamix. Puree and serve with salt and pepper or any seasons to your taste.

Vegan Mashed Taters

Boil some chopped up potatoes for about 15 minutes, drain the water and mix soy milk, earth balance, 1 tsp nutrional yeast and some salt and pepper.

Fat Free Brownie w/ Cherry Icecream

I am realizing in posting these that I have a serious obsession with desserts and really need to lay off all this dessert cooking! But this is a must...I really didn't expect it to be so good. My original intentions were just to make the cookie/brownies but they were all crumbly and fell apart to I decided to put some soy cherry icecream in the middle and it came out wonderful. My harshest critic even ranked it a 10 out of 10...now that amazing!!

Fat Free Brownie w/ Cherry Soy Icecream sandwich

Ingredients
1/2 cup chocolate chips
1/2 cup margarine
1/3 cup dry sweetener
egg replacer = to 1 egg
1 tsp vanilla extract
3/4 cup flour
2 TBSP cocoa powder
1/2 tsp baking powder

In a small saucepan on medium heat, melt the chocolate chips and margarine. Mix in a bowl the sweetener through vanilla and add the melted chocolate. Mix and add the rest of the ingredients. Spread evenly on a parchment lined baking sheet and bake 12-15 minutes. Slice it up, put a slice on a bowl and top it with icecream (any soy flavor you like) and top it with another slice of the cookie.

Tomato Basil Pita Sandwich



We were busy visting all day Sunday with friends and family so I had to throw together a quick lunch that I could bring with us so I sliced pita bread and stuffed it with tomato basil hummus, lettuce, mushrooms and tomatoes and sliced up some apples and kiwi and we were good to go! Quick and simple!

Who The Hell Put Peanut Butter In My Chocolate Cookies?? are delicious, easy to make cookies.



Ingredients
1/4 cup sugar
1/4 cup chocolate chips
1/4 tsp salt
1 cup flour
3 TBSP cocoa powder
1 tsp baking powder
1/2 tsp baking powder
1/4 cup maple syrup
2 TBSP agave nectar
1 tsp vanilla extract
1/4 cup canola oil
1/4 cup peanut butter

Preheat oven to 350. Combing sugar to baking soda. In a seperate bowl combine maple syrup to canola oil. Add wet to dry and mix. Cut peanut butter into butter and spoon rounded tablespoons of dough onto a parchment lined cookie sheet. Bake for 11 minutes.

Golden Vanilla Cupcakes with Choc Ganace Frosting


We were all craving dessert, and wanted cupcakes, I had everything to make the golden vanilla cupcakes with choc ganace frosting from Vegan Cupcakes Take Over the World so I went with it and topped it with bananas.

Teriyaki Stir Fry


A wok is the best thing in the world and I LOVE my classic stif fry. Its really easy to make and I think I have posted about it before. You basically throw brocolli, red peppers, green peppers, onion (the chunkier the better) garlic and tofu in a wok with a little bit of extra virgin olive oil and when its just about done throw some teriyaki sauce on it and toss it on top of some brown rice. YUM!

My New Dehydrator

Inspired by Rawvolution I decided to get a dehydrator. Nothing special just a basic one from amazon.com and I am really struggling as what and how to make food. There aren't many recipes online and the dehydrator booklet it came with wasn't much help so my roommate Shandon and I basically threw everything in our kitchen in and dried it. That was quite an experience I must say...especially the dried carrots and snap peas, LOL! The apples were good though! If anyone has any recipes PLEASE send them my way!


Cookies and Cream Cupcakes with Buttercream Frosting


I made the always delicious Cookies and Cream Cupcakes with Buttercream Frosting from Vegan Cupcakes Take Over The World and must have done something wrong in the doubling of the recipe because they came out much more bitter than usual. I have no idea what I did wrong and while they were edible I made WAY too many and ended up throwing about 15 away. It was very sad to do but we all kickstarted a healty eating/workout plan last Monday and just couldn't have them sitting on the counter staring at us anymore. TOO tempting!!

Raspberry Salad

So even though I am not eating dairy I had people over for dinner last weekend and just HAD to make this delicious salad that had feta cheese in it. It is absolutely amazing!



Ingredients
1 Bag Herb salad mix from Trader Joes
1 package candied walnuts
i package feta cheese
1 small container of raspberries (can also be substituted for cranberries or grapes)
Raspberry vinaigrette Dressing

I'M BACK!!!

I have been busy, busy, busy and haven't posted in over 2 months :0 But I am back with LOTS of pictures and new recipes. I also have gotten a Vita Mix since I have been gone :) It is WONDERFUL!! I make smoothie everynight, guacamole, salsa, and all kinds of delicious soups! Pictures attached!
